Healthy Breakfasts Part 3



Glazed Pumpkin Cinnamon Rolls....anyone? Um, yeah. VERY Healthy right? THEY are!! I used this recipe from my good friend Laura Lee over at Wasted Textbooks and boy oh boy! Were they sooo yummy. I have to admit, I was startled by the first bite. The outer edge was a little too whole-wheaty for me (I usually bake with unbleached all purpose flour) but after I took another bite (and another) and got to the cinnamon and brown-sugary butterness of the roll...to.die.for. J/K ;) But yeah, so good. My little ones devoured theirs and are asking that I put them away so Mom Dad, doesn't eat them all up (I made a dozen)....

I did tweak the recipe a bit since I am using things up and not going to grocery store....
One being I replaced the milk with kefir (was gonna soak them overnight but decided that the dough just wasn't moist enough without the eggs) and replaced the butter in the dough with coconut oil. I DID use butter for the filling of course though!
I also didn't have any cream cheese on hand, so I just made a glaze with a little lemon juice, powdered sugar and milk. I BET the cream cheese would have thrown these over the edge in goodness , so the next time I make them we'll be sure to use it! Here's the final product, healthy (in my book) and yummy......


Now I had a nice tall glass of Cold Brewed Iced Coffee with this and it was just like I had a small bit of heaven this morning...well add to the fact that the new HOD Creation to Christ samples came out today!! It was almost enough to through me into taking a day off of school...um...not!
Oh and we always have some kind of protein with our breakfast, so we had some hard boiled eggs while these were baking.....

Tomorrow we have park day, so I am thinking of baking some muffins to grab on the run. I received a huge box of home-grown tangelos and am seeing what I can throw together..see ya then!

  1. Oh yes, if you're used to baking with white flour, these will quite different: A little heavier and much more filling, which is a good thing, right? No need (9but maybe a small want)) to dip back into the pan for more. And as far as the icing goes, five out of six here find it finger-licking good!! :D
