Blueberry/Lemon Struesel Muffins
I made some muffins this morning and let me tell you, they were so good! I used this recipe on Joy of Baking but tweaked it to death by adding virgin coconut oil in place of the butter in the muffin mix for the added health benefits. The coconut oil gave these muffins a really nice texture and a wonderful flavor! I also decided to make a crumb topping separate from the mix (it calls for using some of the flour mixture from the muffin mix) and just added in more milk and some lemon juice for moisture. The crumb topping was made the same as the recipe called for, I just used a third of the ingredients. I was able to get a dozen muffins and a small loaf of muffin bread from this one recipe for a friend :) The best thing about these muffins is that even though I just had oral surgery on Thursday, I was able to actually eat them! God is so awesome...I haven't had anywhere near the amount of pain that I thought I would have!
I think I'll add these to our Saturday tradition of muffins for breakfast, what do you think? Let me know if you try them or want the exact tweaked recipe :)
